Mee Siam

Gravy Ingredients:
  • 25 g onion
  • 1/3 thumbsize piece ginger
  • 1 clove garlic
  • 50 ml water
  • 2 tbsp oil
  • 5 g chilli paste
  • 1/2 tbsp soy bean paste
  • 1 tbsp peanuts, roasted, grounded
  • 1/2 tbsp dried prawns, finely grounded
  • 1 stalk lemon grass
  • 15 g tamarind pulp, mix with 1.5 lit water, juice strained
  • 1 1/2 tbsp sugar
  • 3/4 tsp salt

Bee Hoon Ingrdients:
  • 3 1/2 tsp oil
  • 25 g onion sliced
  • 15 g chilli paste
  • 40 g bean sprouts
  • 200 g bee hoon, soaked in water
  • 100 ml water
Garnish Ingredients:
  • 2 hard boiled eggs, sliced into wedges
  • 1 small limes in halves
  • cooked prawns, shelled
  • 2 g chive, cut into 2 cm strips
Gravy Procedure:
  1. blend onion, ginger, garlic with 50 ml water
  2. in large pot ... heat oil ... add chilli paste ... fry over moderate heat till fragrant ... add soy bean paste, peanuts, dried prawns
  3. add lemon grass ... fry for a few minutes
  4. add tamarind juice, sugar, salt ... bring to a boil ... set aside
Bee Hoon Procedure:
  1. heat oil ... fry onion till golden brown
  2. add chilli paste ... fry well
  3. add vean sprout ... mix well
  4. add bee hoon, water ... fry till dry
  5. serve bee hoon with gravy
  6. garnish with egg, lime, cooked prawns
